Flavored Marshmallows: The Conclusion!

Yesterday the husband and I made Flavored Marshmallows, but they had to sit overnight to solidify. This afternoon I flipped it out of the pan and peeled the parchment paper off (lost some marshmallow, but not too much, to the paper). We then added some more powdered sugar to what was the bottom side in the pan (and was now the top), since it was pretty sticky.

After a couple more hours, the husband used a pizza cutter to cut it into strips. We then dipped the sticky sides into powdered sugar and let it sit a few more hours.

Finally we cut it into cubes and again used the pan to get some powdered sugar on the sticky sides. We’re going to let them sit one more night before putting them in an airtight container, but they are done and still delicious!

Discovering 2014: Flavored Marshmallows

One of these days I’ll read a recipe the day before I do it….

Today’s project was Flavored Marshmallows, using this recipe from A Beautiful Mess. I have to admit that once we got it all in the mixer we were quite dubious that it would turn to marshmallow, but about five minutes into mixing it changed very quickly!

The downside of not reading the recipe yesterday is that the mixture has to sit overnight, so I can’t report on the final product until tomorrow. For now, here’s a look at how everything else went!

UPDATE: Here’s the conclusion of this project!

I actually had expected this recipe to be more complex than it was. I think the worst part was waiting for the sugar mix to heat up. We never got it to 240°F, and finally called it good at 221°F. Evidently that was good enough because it all worked out!

As I mentioned earlier, the once the sugar/corn syrup mixture and gelatin mixture were in our stand mixer for about five minutes on medium-high speed, it drastically changed. I let it go another two minutes after that just to ensure it all blended well.

Most of the time it looked like the pic of the far left, but it had a change of heart (and color!).

Early on we were wondering if it would even fill an 8×8 pan. Well, it filled MORE than that. We ended up moving it into a 9×12.

My attempt at swirling in the red food coloring was less than stellar, but it’s something. We tried some that was stuck to the mixing paddle and it tastes fantastic. I can’t wait to see how the final product is tomorrow! All that was left was the husband adding some powdered sugar to the top:

Discovering 2014: Cookie Bowls?

Today’s project was Cookie Bowls. As you can see, something didn’t go as planned. My results reminded me of this:

So what happened? I started off using the Sugar Cookie Dough recipe from earlier this month, and I think that’s where I went wrong. I probably should have went with a chocolate chip cookie dough recipe, or something that uses less butter, because I think they ended up separating.

I hadn’t used all my dough, so I made a few normal cookies with it after seeing this just to make sure it wasn’t me messing up the dough. I guess a fail was eventually bound to happen!

So while I was pondering whether or not to bother trying to do another recipe for this at 8pm at night (decided not to), I worked a bit more on my very slow process of learning to crochet. I completed rows three and four, though I have no idea what I’m making!

Tomorrow’s project is Flavored Marshmallows. I’ll likely enlist the husband for assistance with this one as he has 100% more experience using gelatin!

In case you’re curious why the cookies look a bit green: that’s because they are. I used some of my blue and yellow Edible Glitter in the mixture, and it tinted the dough green!

Discovering 2014: Cauliflower Cheesesticks

Discovering 2014 is a personal goal to complete a daily project throughout the year!

Today’s project was Cauliflower Cheesesticks, following this recipe from the Yummy Foods Made Healthy blog.

The “cheesesticks” tasted great, but the unfortunate part is that we had to eat them with a fork because we were unable to do the “flip loaf over” part without destroying it, so one side was completely loose. The husband and I were thinking of trying this again in the future, but more akin to breadsticks instead of cheesesticks.

Whipped Cream Frosting Update!

The original batch of Whipped Cream Frosting, made back on the 11th, was definitely a hit in the household and went pretty quick. It was used on cookies, fruit and ice cream.

We decided to pick up some more fruit this weekend and re-make the whipped cream with cinnamon oil flavoring, which tastes amazingly great with apples! Oil flavoring is more potent, so you only use about 25% of what the recipe calls for in extracts. This time my youngest child helped make the recipe and he had a lot of fun watching the mixture change.

We can’t wait until the local apples are in season here and to try out more flavors with the whipped cream. 🙂
